Kaluga

Huso dauricus

Kaluga caviar is also known as the River Beluga, native to the Amur River, China.

A true giant of the sturgeon family, Kaluga can grow to more than 5.6 metres in length and weigh +1,000 kg.

Huso dauricus may begin producing roe after around eight to 12 years.

Our Kaluga is harvested from fish aged over 15 years, producing large, smooth pearls exceeding 3.4 mm, ranging from medium to dark brown with a glossy golden sheen.

Its rich, buttery flavour and refined, aromatic finish make it an excellent alternative to Beluga caviar, particularly for those who appreciate larger eggs and a generous, luxurious texture.
